In Recipe #54 I gave you Tomato & Coriander Salsa. But since publishing that recipe and also getting my new Electric BBQ I had an epiphany. “What if I roast the tomatoes!”.
Well, roasting your tomatoes on a BBQ and then creating your salsa just takes takes it up 10 levels. It is such a versatile dish and works well with many other cuisines. I actually made this to go with my Mackrell dish (Recipe #61), and it worked a treat!
As per Recipe #54 it adds a freshness and depth of flavour to both Indian and Mexican dishes, both of which my family really loves. You could also make a batch and just add it to toast as a snack, or have it ready for when you make Pita’s.
Really, this salsa goes well with so many different dishes and cuisines.
I use it for:
- As a condiment for curries
- Fish
- Chilli con carne
- Nachos
- Bruschetta
- Salad with BBQ
