I am trying to follow a low carb diet, however, I just absolutely love potatoes. Unfortunately potatoes are about the worst vegetable to eat when you are on a low carb diet because the potato basically converts to pure sugar when you digest it.
When I say I love potato, then mashed potatoes are probably at the top of my list of favourite potato dishes. Cauli-mash is a fantastic alternative to mashed potato with any dish where it is required. I even make Cottage Pie with this.
