Spaghetti is by far my favourite form or pasta – but it requires a deft touch to get it perfect. Undercook it and you taste crunchy raw flour. Overcook it and it is soft and gloopy gunk. It needs to be cooked (as the Italians say) “al dente”.
Al Dente means ‘to the tooth’ or ‘to the bite’ – and is cooked through but still firm and very slightly chewy.
Really – take the time to get it right, it’s worth it.
