Pho (pronounced Faa) is the ultimate soup, and seriously one of my favourite things in the entire world. It does not rank quite at the same level as my children, BUT it’s close!
The thing about Pho is time, and to do it properly, you need a lot of time, and a lot of patience. But, it is truly worth it. This is pure magnificence, and honestly we usually eat pho at least once a week. Yes, I take short-cuts when I make it on the run, but this is the ultimate recipe.
The secret to Pho is the broth. If you get the broth right the rest is easy. And the broth is made with bones…yes, a lot of bones, and oxtail, and onions, and ginger, and more bones. Meaty bones. Do not cut corners. Set aside a day to make Pho, and you will find that you will be setting aside more days in the future!
And, when you serve it, serve it in big bowls – yes, really share the love – because this dish is love!
