Poke (pronounced PohKay) is simply fantastic. It is fresh and healthy and delicious, all in a single bowl! Poke is the Hawaiian take on sushi, usually served with a marinated raw fish and a selection of vegetables. But, there are 100’s of variations, really, so it is one of those dishes that you can really experiment with and create your own signature dish.
In summer we rarely go a week without a Poke Bowl, my go to ingredients being:
- Red Onion
- Fresh Chilli
- Sushi Rice
- Dried Edamame Beans
- Sesame Seeds
The Marinade is usually a combination of citrus, rice vinegar and soy sauce.
This week I am trying something different as we bought some tofu last week (not my favourite thing) and now it is just sitting in the fridge. We also bought some salmon trout, which I usually grill and serve with a cream and caper sauce (recipe to follow sometime 😉
But it is such a lovely day, and seeing as though I have just got my new Electric BBQ, I just cannot contain myself to “fire” it up…so here goes this new recipe.
Also, because we are searing the fish, we are not going to apply a marinade before, but rather a dressing before serving.
