I came up with this salad to go with my Asian-style Oxtail (CLICK HERE FOR RECIPE). Traditionally oxtail is served with starch and cooked vegetables, but I always find that this is very heavy going, and so I have experimented with getting something fresh and crunchy to work with the Oxtail.
This salad really does add a freshness and the acidity of the dressing breaks the richness of the oxtail.
You can really use any type of vegetable that you like, as long as it is raw and fresh.
- Sesame Seeds -Before using, roast the sesame seeds in a hot pan until they start browning. This will release the oils for more flavour. Please watch it carefully as they burn quickly. Do not use if anyone is allergic.
- Deseeding the cucumber – Cut the cucumber in half – LENGTHWAYS. Use a teaspoon to scrape out the seeds, by drawing it down the middle. You will get it…its really easy.
- Squeeze Limes, EASY PEASY – Limes are usually quite hard and thus making it difficult to get all the juice out. Put your limes into a microwave for about 20 seconds (or in pot of boiling water for the same time). Let them cool slightly and then roll them between your palm and counter top to loosen the insides. Slice in half and squeeze the juice out. You will see all the juice comes out!
If you have some picked ginger (sushi ginger) hanging about, you can syphon off about 2 or 3 tablespoons (Tbsp) to add to your dressing.
